When the boys were little we had Hot Dog Creole fairly regularly because it was easy and inexpensive. I still like easy and inexpensive, but since we no long have to pinch our pennies, today I made it with kielbasa instead of hot dogs. Because it’s so easy, you don’t even really have to follow an exact recipe. Just combine some vegetables with sliced kielbasa (or hot dogs) and cooked rice (or cooked pasta).


Kielbasa Creole

Saute some chopped onion, green pepper and garlic in a bit of oil. Add some sliced kielbasa, then a can of diced tomatoes and a can of tomato sauce. Stir in some corn if you’d like. Season with salt, pepper and chili powder. Mix with cooked rice and heat through.
