When you have a giant hamburger for lunch, it’s a good idea to have a salad for dinner, so that’s what we did. The avocado in the fridge and the salmon in the cupboard led to this creation.

Creamy Avocado Salad Dressing

1 avocado
1/3 cup sour cream
1/4 cup milk, more or less
1 tablespoon lime juice
2 tablespoons fresh parsley
1 teaspoon minced garlic
Salt and pepper to taste

Combine all ingredients in food processor and blend until smooth.
