Cornish Game Hens
A Dutch Oven Recipe

It’s actually a very simple recipe, and while it looks a little bland, it tastes much, much better than it looks. Give it a try some time.

Prepare either some wild rice (our recipe is here) or some bread stuffing and spoon into the cavity of a Cornish game hen. (We then sewed the opening shut, although I’m not sure that’s totally necessary.) Brown in a bit of oil in the Dutch oven, season to taste with salt and pepper, then add 1/2 cup of water, and place (lid on) in a 250 degree oven for about 45 minutes.

When the game hens are cooked, remove them from the pan and make some gravy either by whisking in some flour or adding a can of cream of chicken soup. Spoon the gravy over the hens and serve.
