This pie is a variation of our favorite Easy Cherry Cheesecake. I used a regular baked pie crust instead of a graham cracker crust. Then, in place of canned cherry pie filling, I made a berry topping using this peach pie recipe as my inspiration. Basically I just mixed some smashed strawberries with some sugar and cornstarch and cooked it until it was thick. Then I stirred in some blueberries, raspberries and additional sliced strawberries. Fresh berries would be delicious, but I used thawed frozen berries and they tasted great.
