We celebrated a gray, wet, and dreary Memorial Day by walking around a county park – really just a boat ramp – in the rain and then grilling some chicken indoors. Supposedly this is the “Best Ever Memorial Day Barbecue Chicken” recipe. I’m not so sure it lives up to “best ever” status. However, we did enjoy it, and it does help use up the bottle of Worcestshire sauce quickly, so those are some benefits.
Combine 1/2 cup Worcestershire sauce, 1 teaspoon Cajun seasoning, 1 teaspoon garlic powder, 2 1/2 tablespoons brown sugar and 1 1/2 tablespoons catsup. Pour over 6 chicken breast halves and marinate at least 8 hours. Then grill until done.
We also have a jar of cocktail sauce that should be used soon. Maybe it’s time to grill some steak and use this marinade. Note that the recipe says to serve with mushrooms. That sounds delicious.
Combine 2/3 cup cocktail sauce, 1/4 cup honey, 3 tablespoons soy sauce, 1 tablespoon olive oil, 3 cloves garlic (crushed), and 1/4 teaspoon seasoning salt.
