We ran out of lettuce, yet still want to have salads with our dinner. Here are some of the ones we’re trying until I go to the grocery store next month.
Combine grated carrots and diced tomatoes, stir in some sliced green onions and roasted pumpkin seeds and a pinch of dried red pepper flakes and sea salt. Drizzle with a bit of olive oil and balsamic vinegar and serve. (Click on the link if you want actual amounts. I didn’t really measure, and we really liked this new salad. I never would have thought of this specific combination of ingredients.)
