This was one of our favorite, fall-back, quick and easy desserts when the kids were little. It also makes a great base for Boston Cream Pie (see here), and even Pineapple Upside-Down Cake (see here). Thank you, Betty Crocker.

Dinette Cake

1 cup sugar
1/3 cup shortening
3/4 cup milk
1 egg
1 teaspoon vanilla
1 1/3 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt

Cream sugar and shortening; stir in milk, egg and vanilla. Combine and stir in dry ingredients. Pour into a greased 9″ (square or round works) cake pan and bake at 350 degrees for 30-35 minutes.
