Here’s a delicious dessert – Cherry Cheese Bars – from our Bake Sale Cookbook. Because it’s made with pie filling, and because pie filling comes in many different flavors, we’ll be having this again a few times before moving on to the next recipe in the “best selling bar cookie” category.

This has a few layers, and each one is cooked a bit before adding the next. First is the crust (made with flour, sugar, butter/shortening, walnuts and coconut), then the cheesecake mixture (cream cheese, sugar, eggs and vanilla), then the fruit filling topped with more nuts and crumbs (set aside from the crust).

Although I normally think of bar cookies as a finger food, these are better eaten with a fork!
