Elizabeth served a delicious chicken salad last week, and when chicken salad showed up on our menu this week, I decided to try and replicate it. Several years ago she shared a link to this salad, so reviewing that is a great place to start.
Combine cooked chicken (drizzled with your choice of barbecue sauce), chopped lettuce, tomatoes, cucumber, corn and grated cheese. Toss with some Ranch dressing and serve. Isn’t that simple? I imagine it would be delicious to add some black beans and/or diced avocado as well. What do you think?
